Roasted Sweet Potatoes and Broccoli

A colorful tray bake that works with almost any main dish.

Ingredients

  • 2 large sweet potatoes, cubed
  • 1 head broccoli, florets
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper

Steps

  1. Heat oven to 220°C.
  2. Toss sweet potatoes with oil, paprika, salt and pepper.
  3. Roast 15 minutes, then add broccoli and toss.
  4. Roast 15 to 20 minutes more until browned and tender.

Tip: Keep pieces similar size so everything cooks evenly.
